Wrapping up the week of vegetable appetizers is best done with veggie ball recipes, at least to my mind. They are a fine party food, like a regular meatball, but they also get some vegetables into your menu in a fun way. Try one of these, you’re sure to be pleased.

Zucchini Ricotta “Meat”balls– Have leftover ricotta from the lasagna you made? Put it to good use in the zucchini balls. Tender and flavorful, it’s a great, bite-sized way to get some veggies into your appetizer menu.

Spinach Balls– These are a variation of the classic spinach square recipe. Why opt to make these instead? Although it takes more time for the cook to form them, they’re simpler for your guests to eat. Put them on a tray, add some toothpicks or small forks, and let the eating begin!

Broccoli “Meat”balls– These may have been my first foray into vegetable balls. What I discovered with this recipe is that I love them. That’s not shocking. What I also discovered is that everyone who ate them loved them as well.

A very important note about all of these veggie ball recipes: Do not pretend that they are meatballs or a replacement for such. Your carniverous guests may revolt. If you present them as they are, delicious, sphere-shaped veggie appetizers, you’re bound to have many fans.
