In New England, we have this fine habit of excitedly anticipating summer’s arrival. Then, once the heat and humidity arrive, we have a habit of complaining about how hot it is. I can’t say that I complain about the heat all that much because my toes are perpetually cold, but I also appreciate a chilled meal at the end of a hot day. These four soups make a fine part of a cool dinner.

Chilled Blueberry Lemon Soup– If you’ve been blueberry picking, you may have more berries than you know what to do with them. Try them in this tangy, creamy soup.

Nectarine Soup– It’s not too often that I see recipes featuring nectarines. Their cousins, the peach, get most of the spotlight. Change that trend, and make a healthy, slightly sweet nectarine soup tonight.

Peach Cherry Chilled Soup– Yes, here are those cousins- the peaches. Paired with cherries, this soup is bursting with flavors and color. It’s a soup that’s quite memorable.

Cucumber Gazpacho– Finally, if a fruit-based soup isn’t your thing, this cucumber gazpacho is a fine option. Yes, there are grapes in the recipe, but the gazpacho leans toward savory far more than sweet.
