If you’re a regular reader (You are, aren’t you?), you know this week’s theme is Madrid. Reviewing our recipes, I made a discovery or two. First, I haven’t written about any other Madrid-focused foods. Second, we don’t have many potato or garbanzo bean recipes. Third, many of the dishes central to Madrid include organ meats, and I definitely don’t have that sort of recipe.

So, for this week’s Flashback Friday, please allow me to be generous in what I’m including in the theme.

One dish that is known in Madrid is gambas al ajillo, which is prawns with garlic. At Think Tasty we may not have made shrimp in this style, but we do have a lovely shrimp appetizer from last year- Shrimp & Avocado Cocktail. This is a delightful, chilled dish, a great way to start an indulgent meal.

While Madrid is not known for many pieces of produce, Spain is famous for an assortment of fruits and veggies, including oranges. One way that we have enjoyed this citrus fruit is in a Beet & Orange Salad. This dish is bright and flavorful, a nice addition to many a menu.
