How to make Vegan Eggplant Burger Recipe

Ingredients

The ingredients to this recipe are fairly simple. To make this recipe, you will need:

2 tsps. of olive oil (you will also need some more oil to brush the eggplant with before you roast it)
1 diced red onion
1 can of cannellini beans (14 oz can)
¼ cup of green bell pepper (diced)
1 cup of eggplant (ideally, ½ an eggplant)
¼ cup of fresh parsley (chopped)
1 tbsp of pine nuts
1 clove of garlic (crushed)
1 tsp of sea salt
1 tsp of ground cumin
½ cup of hummus (Hummus is made from chickpeas and is 100% vegan-friendly)
1 cup of panko breadcrumbs
4 large burger buns
Vegan mayonnaise
Optional: 1 tomato (sliced for toppings)
Optional: Lettuce (for toppings)

How to prepare Vegan Eggplant Burgers?

Preparation

Step 1: Before beginning on making the vegan eggplant burgers, you need to set your oven to preheat to 450° F. Doing this will prep your oven suitably and will not waste time later when you will need to pop the preparation in for baking the eggplant.

Step 2: The next step will require you to roast the eggplant. Cut the ½ eggplant into ¼ inch slices (this will roast the vegetable faster and better) and brush each of the sides with olive oil.

Step 3: You need to bake the eggplant for about 10 minutes on one side. Once that side is done, flip over the slices to the other side and bake for about 5 minutes. Both the sides now should be equally baked and roasted.

Step 4: Once the eggplant is properly roasted, you have to remove it from the oven. Turn the oven’s temperature down to 400° F now.

Step 5: This step is to be done while the eggplant is roasting. You need to place a skillet on your stove, and put in 2 teaspoons of olive oil. When the oil is warming up, put in the diced red onions, and cook over medium heat for about 15 to 20 minutes, and keep an eye out for when the onions start to soften. When the onions are suitably done, remove them from the skillet and place the onions into a large bowl.

Step 6: To this large bowl, add the eggplant roast, beans, the parsley, the diced green bell pepper, pine nuts, garlic, sea salt (it will give that beautiful kick of flavor) and the cumin.

Step 7: Add your favorite homemade or store-bought vegan hummus to this bowl and stir the entire mixture.

Step 8: Next, put the mixture into your food processor and blend everything in a fine mixture. This should take about a minute or so. Now, pour the mixture back into the bowl.

Step 9: Fold the breadcrumbs into this mixture. Scoop a little bit into your hands and use your hands to shape these balls into four large patties. Put a baking sheet and line it with aluminium foil and spray it with a nonstick cooking spray or some olive oil. Place the patties in it and bake for about 45 minutes. Make sure to turn them once while the cooking process is halfway.

Step 10: Remove the patties from the oven. It is time to assemble the burgers. Spread a generous layer of vegan mayonnaise or your preferred spread on the halved bun, add your favorite toppings in it and add your eggplant burger patty in it. Enjoy the delicious vegan eggplant burger!
