Chocolate-Covered Peanut Butter Pretzel Sandwiches

Ingredients
  

  • 1/2 cup creamy peanut butter
  • 2-1/2 Tb. powdered sugar
  • 100 checkerboard-shaped pretzels
  • 1 cup milk chocolate chips

Instructions
 

  • Combine peanut butter and sugar in a medium-sized bowl and mix with hand mixer until smooth.
  • Spread a small amount of peanut butter mixture on a pretzel and top with a second pretzel. Transfer to a waxed paper-lined plate.
  • Repeat 49 more times. (It’s worth it!)
  • Refrigerate for 1 hour.
  • Place chocolate chips in a small bowl. Microwave in 30 second intervals. Stirring after each until thoroughly melted.
  • Dip pretzel sandwich in chocolate, scraping off excess.
  • Return coated sandwich to waxed paper-lined plate.
  • When all 50 sandwiches are coated, refrigerate for 30 minutes.

Notes

If you prefer a sweeter filling, more sugar can be added.
