Everyday French Onion Mushrooms

sliced sweet onion

granulated white sugar

fresh thyme*

beef broth

swiss cheese

Instructions
Preheat oven to 425°F.
Remove mushroom stems and a small amount of gills with a spoon to provide more area to hold filling.
Brush both sides of mushrooms lightly with olive oil.
Place mushrooms cap side down on a rimmed baking sheet.
Bake for 8 minutes; flip and bake for an additional 4-6 minutes or until tender.
Remove from oven, and place caps gill side down on a paper towel-lined plate.
While mushrooms bake, melt butter in a large frying pan over medium heat.
Add onions, reduce heat to medium-low, and sauté for 20-25 minutes or until golden brown.
Preheat broiler.
Add sugar, thyme, and broth, and increase heat to medium.
Sauté for another 5 minutes or until all liquid is absorbed.
Place mushrooms cap side down on a rimmed baking sheet, and divide onion mixture among the mushrooms.
Top each with a slice of swiss cheese.
Place baking sheet on the upper rack of the oven, and broil for 30-60 seconds or until cheese melts.
Notes
Can be replaced with 1 teaspoon dried thyme
