head cauliflower

garlic powder

garlic salt

chili powder
black pepper

olive oil
buffalo sauce
Instructions
Preheat oven to 450°F.
Cut cauliflower into bite-sized florets.
Combine garlic powder, garlic salt, chili powder, and freshly ground black pepper in a small bowl.
Place florets on a rimmed baking sheet, and drizzle with olive oil. Toss well.
Sprinkle seasoning mix over cauliflower, and toss well again.
Spread florets in a single layer over the baking sheet.
Bake for 15 minutes.
Flip, and bake for another 15 minutes.
Using a spatula, gather cauliflower in a pile on baking sheet. Pour approximately 1/2 cup of buffalo sauce over cauliflower.
Toss well, then spread florets in a single layer, and return to oven.
Bake for 5 minutes.
Serve immediately with blue cheese dressing, if desired.
Notes
For a healthier dip, combine 1 cup lowfat, plain Greek yogurt with an ounce or two of crumbled blue cheese.
