Buffalo Cauliflower Florets

Ingredients
  

  • 1 head cauliflower
  • 1 teaspoon garlic powder
  • 1-1/2 teaspoons garlic salt
  • 1/2 teaspoon chili powder
  • black pepper
  • 2 tablespoons olive oil
  • buffalo sauce

Instructions
 

  • Preheat oven to 450°F.
  • Cut cauliflower into bite-sized florets.
  • Combine garlic powder, garlic salt, chili powder, and freshly ground black pepper in a small bowl.
  • Place florets on a rimmed baking sheet, and drizzle with olive oil. Toss well.
  • Sprinkle seasoning mix over cauliflower, and toss well again.
  • Spread florets in a single layer over the baking sheet.
  • Bake for 15 minutes.
  • Flip, and bake for another 15 minutes.
  • Using a spatula, gather cauliflower in a pile on baking sheet. Pour approximately 1/2 cup of buffalo sauce over cauliflower.
  • Toss well, then spread florets in a single layer, and return to oven.
  • Bake for 5 minutes.
  • Serve immediately with blue cheese dressing, if desired.

Notes

For a healthier dip, combine 1 cup lowfat, plain Greek yogurt with an ounce or two of crumbled blue cheese.
