Preheat oven to 300 degrees.
Combine goat cheese, cream cheese, walnuts, and rosemary in a small bowl.
Stir until fully combined.
Cut dates in half, discarding pits.
Fill each date half with a small scoop of the goat cheese filling.
Place filled dates on a small baking sheet.
Once all are filled, bake for 5 minutes.
Garnish each with the tiniest pinch of salt and drizzle of honey, if desired.
