olive oil

medium sweet onion
diced

can vegetable broth

frozen peas
thawed

cup
frozen spinach
thawed and squeezed dry

tablespoon
lemon juice

plain Greek yogurt
Instructions
Heat olive oil in medium saucepan. Add onion and saute until tender.
Add defrosted peas and broth.
Bring to a boil, then reduce to a simmer, cooking for about 2 minutes.
Add spinach, stirring well.
Cool slightly and puree in a blender or using a handheld immersion blender.
Return to saucepan, add lemon juice, and warm over low heat.
Season with salt and pepper to taste.
Divide between two serving bowls
Top with a dollop of Greek yogurt.
Serve warm.
