Innkeeper Betty Foy of Meadows Inn in New Bern, NC serves guests these Yummy Buttermilk Muffins, which definitely more than make the grade! Located near excellent restaurants, antique shops, the riverfront convention center, and the river walk, this beautiful B&B is ideal for a romantic escape, girlfriends getaway, family reunions and much more. Plus, we can’t forget the delicious homemade breakfast served daily.

Bake a batch of these muffins, and you’ll have after-school snacks for at least a couple days.

Yummy Buttermilk Muffins

A sweet muffin with a surprise swirl of fruit

Ingredients
  1. 2/3 cup shortening
  2. 1 cup sugar
  3. 3 eggs
  4. 3 cups flour
  5. 3 tsp. baking powder
  6. 1 tsp. salt
  7. 1 cup buttermilk
  8. Strawberry preserves or any preserves
  9. Almonds
Instructions
  1. Cream shortening and sugar.
  2. Add eggs one at a time. Beat well.
  3. Add dry ingredients, alternately with buttermilk.
  4. Mixture keeps in the refrigerator 2-3 weeks. Use as much as needed each time.
  5. Place a dollop of batter in the bottom of paper-lined muffin tin.
  6. Put a teaspoon of preserves on top, followed with a small amount of additional batter.
  7. Swirl the batter and preserves.
  8. Sprinkle slivered almonds on top.
  9. Bake at 375 degrees for 20 minutes.
  10. While still warm, drizzle a small amount of white frosting on top (optional).
Notes
  1. These are best baked fresh and warm. You can make two at a time or an entire muffin pan full. Can be baked in a Pyrex pie pan and cut into wedges for serving. Become a super-mom while this making kid-friendly with chocolate chips and chocolate frosting on top for that after-school treat.
