Apparently, I have a thing for adding nuts to my biscotti recipe. Thus far this week I have had four other biscotti recipes that highlight nuts. From peanuts to walnuts to pistachios to almonds, there are recipes from which to choose.
But, wait, there’s more!
Oh yes, I make biscotti with pecans as well. Today I’m sharing two of those recipe. Pick the flavors you like best, and let the baking begin.
Pecan Biscotti with a Bourbon Kick
If you’re a fan of amber liquor, these are the biscotti for you. Finished with a sweet bourbon glaze, there is a nice hint of liquor that is tempered by the sweetness of the biscotti and the crunch of the pecans.
Salted Butterscotch and Pecan Biscotti
If you have a sweet tooth, then you should give this recipe a try. Yes, the butterscotch glaze does make them sweeter than my typical biscotti recipe, but the addition of flaked sea salt does reduce the sweetness a bit.
What better way to enjoy a weekend morning than a cup of coffee and one (or two) of these biscotti? Choose your favorite, buy the ingredients, and then get baking!
