These appetizers have it all. They’re beautiful, delicious, and healthy. Keep your eating on track while enjoying an impressive appetizer.
Although this week’s theme was healthy vegetable appetizers, I added one dish to this list that technically is not an appetizer. However, if you want to do things a little differently and serve a salad in place of an appetizer, I thought this recipe fit this collection quite nicely.
Broiled Pineapple with Yogurt & Macadamia Nuts
Pineapple- It might be sliced or diced or even crushed, but do you often think of broiling it? I’m here to change your thinking. Broiling pineapple increases its sweetness and adds a little bit of crunch. That’s a fantastic way to turn pineapple into an elegant appetizer.
Tropical Fruit Stack
Get your meal off to a light start with this tower of pineapple, guacamole, and mango. Whether you need a cool dish for a hot summer day or are dreaming of something besides the pile of snow outside your window, this makes a terrific appetizer.
Healthy Thai Salad with Chicken
So, here’s the appetizer/salad recipe. If you’re making a menu of snacks (perhaps a Tapas Monday menu), this Thai-style salad is a great choice. Served in a smaller portion, it makes a fine appetizer.
Keep the healthy eating theme going through January with one of these nutty appetizers!
