Strawberry Rhubarb Salad– Sure, most people see rhubarb and think strawberry rhubarb pie. We’re going to turn that on its head and make a salad. It’s healthier and just as delicious!
Rhubarb Chutney– A charcuterie tray is one of my favorite ways to snack because (a) you get to nibble on an assortment of items and (b) it sounds fancy but can be just cheese and crackers. Add some rhubarb chutney to the mix, and it’s a very classy snack!
Roasted Rhubarb Crostini– This is about as simple a crostini topping as you can get. Spread goat cheese on toasted bread and add roasted rhubarb. It looks amazingly elegant, but you know it wasn’t that hard to do.
