We are three-fourths of the way through January, which means you may be ready to splurge on a dish that’s not 100% healthy. You also may be happy with your new healthful eating regimen and not want to stray. I’m here to help with either of these situations! Today I’m sharing two sweet potato recipes that are healthy and two that are splurge-y. You choose the one that is good for you, or you make them all when you see fit!
Sweet Potato Biscuits– This was one goes on the naughty list, but you’ll enjoy every bit of it. Warm from the oven sweet potato biscuits, topped with butter and honey are worth every extra calorie (and step on the treadmill).
Coconut Crusted Sweet Potato Fries– I love baked sweet potato fries, but they never have a lot of crunch. How to solve it? Coat them in coconut. Are they really healthy? Probably not. Are they really yummy? Yes!
Loaded Sweet Potatoes- Hotel Style– This recipe was created when my husband and I lived in a hotel while we were transitioning from a house to a loft. However, they (obviously) can be made at home as well. This recipe goes on the “good for you” and easy to make list.
Warm Sweet Potato Salad with Spinach & Cranberries– This is a newer to Think Tasty recipe that I totally adore. It’s a great meal for a cold winter’s night, as you have a dish that’s served hot and is nicely filling. Plus, it’s really good for you, so what more could you want?
