I’d say that eggplant is my favorite vegetable to cook with, but that would be a lie. The list of vegetables that I love to work into my recipes is long. In fact I’d be better off listing the veggies that I’d rather avoid, as there aren’t many. However, eggplant is a fun ingredient to work with and is a regular part of my dinner menu. I know that many people are less fond of this vegetable. I’m pretty sure that at least one of these might change their minds.
Eggplant Salsa– This recipe is good for those who already enjoy eggplant. There’s no denying that there’s eggplant in this recipe, and why would you want to? Serve it with some crispy pita chips, and you’ve got a fabulous appetizer!
Baba Ghanoush– This is the recipe to use for those who aren’t sure about eggplant. In my general circle of friends and family, hummus is enjoyed by all. Baba Ghanoush is basically hummus made with eggplant instead of chick peas. Yes, it’s a bit wetter, but I’m pretty sure you could make a few eggplant fans with this recipe.
Grilled Eggplant Parmesan Sandwich– I love the idea of an eggplant parmesan sandwich, but I don’t want all the grease and heaviness of fried eggplant. This recipe solves that problem. Cook your eggplant under the broiler, on the grill, or in a nonstick frying pan, and you have a healthier, but just as tasty, eggplant parm sandwich.
Warm Eggplant & Goat Cheese– This is the recipe to make when tomatoes and eggplant are in season. Since it’s such a simple recipe, you want vegetables that are full of flavor. With a layer of goat cheese, there’s a delightful creamy note to accompany the brightness of the eggplant and tomato.
