After the wearing o’ the green, drinking green beer, and partaking in any other St. Patrick’s Day celebrations, it’s time to start to veer toward healthy again. To help with this task, I’m sharing some of my favorite healthy-ish recipe. All are veggie forward, but all have a pinch of a guilty nature to them. Make them and see how delicious eating green can be!
Green Bean Fries– These are my favorite type of fry. They’re crunchy and salty but also still pretty darn good for you. They even pair well with ketchup!
Broccoli Apple Bacon Salad– If you’re going to try and get a non-veggie fan to eat a salad based around broccoli, I have a suggestion. Add bacon. You’ll have him or her requesting seconds in no time.
Spinach Balls– Who needs meatballs when you have these veggie-centric balls? They’re full of flavor and cheesy. What’s not to love?
Tastes Like Spring Pea Soup– This soup is a great way to get more green into your diet. Besides being healthy, it’s also packed with flavor and makes for a beautiful presentation. Win, win.
