The Captain Schoonmaker Bed & Breakfast, at the base of Mohonk Mountain in scenic upstate New York, sends us this recipe and offers guests “a large multi-course country gourmet breakfast featuring eggs from our own hens.”
- 1 3/4 c. flour
- 3/4 c. sugar
- 2 1/2 tsp. baking powder
- 1 tsp salt
- 3/4 cup milk
- 1 large egg
- 1/3 cup vegetable oil
- 1/2 cup blueberry preserves
- 1 cup fresh blueberries
- Mix dry ingredients & gently stir in fresh berries, set aside. Mix milk, egg, oil & preserves. Fold wet into dry until just moistened. Pour into loaf pan.
- 1 stick softened butter
- 1 cup flour
- 1 cup brown sugar
- 1 cup oats
- Mix with fork until large crumbs form. Crumble over batter. Bake at 350° 45 minutes or until done.
