Blueberry Chutney

Monday was Valentine’s Day, which according to card stores, florists, and chocolate shops is the most romantic day of the  year.  That sort of thinking is fine; I have no problem with a day that is set aside to recognize love.  However, as Valentine’s Day fell on Monday this year, it made me realize that in my marriage, we celebrate almost every Monday.

As regular readers know, Monday nights are Tapas Mondays at our house.  An evening, which started out of necessity due to a weekly meeting in my husband’s schedule, has become a wonderful way for the two of us to have a romantic dinner, even with kids at home.  So, this Monday was a Tapas Monday in our house, but we did make it a little more festive in honor of the holiday.  I created a tapas menu served in three courses, paired each course with a special beverage, and changed the dress code from formal to evening wear.  (Nothing like an excuse to wear a cocktail dress at home!)

Sitting down for the first course in our candlelit dining room, I realized how fortunate we are.  Not only do we get to celebrate in the spirit of Valentine’s Day almost every Monday, but also we have the gift of each other- someone who is loving, understanding, and supportive.  We truly are lucky.

Blueberry Chutney

Ingredients
  1. 1/4 cup apple cider vinegar
  2. 1/4 cup brown sugar
  3. 1 clove garlic, minced
  4. 1/2 teaspoon chili powder
  5. 2 cups blueberries
  6. 1-1/2 teaspoons cornstarch
Instructions
  1. Combine all ingredients in a small saucepan over medium heat.
  2. Bring to a boil.
  3. Reduce heat to a simmer.
  4. Allow to simmer for 15 minutes, or until sauce thickens and flavors have melded.
  5. Cool for 10 minutes, or refrigerate if serving later. Serve with pita chips or crackers.

    OMG! I made your blueberry chutney and it was amazingly wonderful! I love blueberries, they are actually one of my favorite things but cooking with them (at least for me) is a bit puzzling. Thanks for sharing this, it was excellent!
