As I am editing this post, crazily enough it is May 18th. However, the year is 2024, not 2015. The good news is that strawberries are abundant at our home in Kentucky, so this just may be on our menu tomorrow night.

At our house we are huge fans of chicken salad sandwiches. In fact, they make a regular appearance in our summer menu. For us, chicken salad is an individual item. So, on chicken salad nights, there are chicken breasts, binding ingredient (mayo, yogurt, etc.), and an assortment of add-ins and spices. While not as outlandish as the sandwiches we make on panini night, they each reflect our personal palates.
With the return of summer-like weather (as it seems that we are skipping spring), it was time to have a chicken salad night. Knowing the strawberries were soon to be a theme ingredient, I was determined to incorporate them into my salad. I wondered how many variations I would have to make before I found a winner. The surprising answer: one (1!).
This version of chicken salad is quite healthy, as there is no mayonnaise in it. You’ll note in the recipe that I did add a bit of sugar. While it may sound odd, plain Greek yogurt can be a bit tart. I think it worked well. If you prefer, the sugar could be omitted. The one thing that I would highly encourage would be to serve this salad in a wrap as opposed to bread. The lightness and healthiness of this salad shone brightly in a piece of lavash. I’m afraid it could be lost inside a roll or between slices of bread.
Pairing a sandwich such as this with a cocktail is a bit more difficult. The flavors are delicate, and you don’t want them to be overrun. What I found, if you want a beverage with a slight kick, is to make a grown-up version of an Italian soda. To get the recipe, be sure to visit Parched No More. - 1 cup cooked chicken breast, chopped
- 1 celery stalk, diced
- 6 strawberries, hulled & diced
- 3 tablespoons plain Greek yogurt
- 1/2 teaspoon sugar
- salt & pepper
- 1-2 wraps
- lettuce
- Place chicken, celery, and strawberries in a medium bowl.
- In a small bowl, combine yogurt and sugar. Stir well.
- Add yogurt mixture to chicken mixture and stir.
- Season with salt and pepper to taste.
- Depending on the size of wrap you use, top 1 or 2 wraps with salad.
- Top lavash with lettuce.
- Roll up, and enjoy!
