Deviled Pork Skewers

Fatty foods especially take to these seasonings as they balance out the heat. Pork tenderloin is lean, but the fat from the bacon in this recipe provides the necessary richness. Simple and quick, these deviled pork skewers make a pleasant change from the usual kebabs.

 

 

 

Deviled Pork Skewers

Ingredients
  1. 1 lb. pork tenderloin
  2. ½ lb. thick-sliced bacon
  3. 4 TB Dijon mustard
  4. 3-4 slices white sandwich bread
  5. 4 TB (1/2 stick) butter
Instructions
  1. Trim and cut the pork tenderloin into 1” cubes.
  2. Cut the bacon into 1” pieces.
  3. Trim the crust off the bread if desired, and cut up the bread into cubes; process into crumbs in a food processor.
  4. Alternating with pieces of bacon, thread skewers with cubes of the pork tenderloin.
  5. Brush the meats with mustard, and roll the skewers in the bread crumbs.
  6. Melt the butter, and baste the bread crumbs with it.
  7. Grill or broil the skewers, turning them to brown evenly on all sides, for 10 to 15 minutes, or until done.
