Starting with quick and easy cake mix, you add  a little honey, some walnuts, and a couple of kitchen staples to create a moist, sweet quick bread that’s great for breakfast, a coffee break, or even dessert. Finish it with a quick and easy homemade glaze. This recipe comes to us from the Inn at Westwynd Farm B&B in Hummelstown, PA, which is, yes, really on a (horse) farm. If you’re a patient or visitor at the nearby Hershey Medical Center, ask about the Inn’s reduced rates.

 

Honey Walnut Breakfast Loaves

Ingredients
  1. 1 package super moist yellow cake mix
  2. 1 cup water
  3. ½ cup chopped walnuts
  4. 1/3 cup butter, softened
  5. ¼ cup honey
  6. 3 eggs
Vanilla Glaze
  1. 1 cup powdered sugar
  2. 1-2 tbsp. milk
  3. ½ tsp. vanilla
  4. Additional chopped walnuts
Instructions
  1. Heat oven to 350. Grease bottom & sides of 2 loaf pans with spray.
  2. Beat cake mix with other ingredients on low for 30 seconds and then on medium for two minutes. Pour into pans.
  3. Bake 8 inch pans 50-60 minutes, 9 inch pans 40-45 minutes or until toothpick inserted in center comes out clean.
  4. Cool 15 minutes before removing from pans. Cool at least an hour before frosting with glaze.
Glaze
  1. Mix sugar 1 tblsp. of milk and vanilla. Stir in additional milk 1 tsp at a time until smooth and the consistency of a very thick syrup. Spread glaze over top of loaves allowing some to dribble down the sides. Sprinkle additional nuts over top of loaves.
