Tastes like it’s indulgent; made as a healthy dish
You know my eating rule- desserts are for the weekend. However, that doesn’t mean that I never have cravings on weekdays. I am human, but what I do have is willpower. So, just because I am thinking that some sweetness would be yummy on a Wednesday doesn’t mean that I’m going to make a cake or batch of cookies. Nope.
What it may mean is that I get to find a way to be creative and soothe my craving while also keeping my eating on schedule. Quite often these healthy desserts that I create also please other diners in my household. There have been a number of occasions where my eye-on-calories-and-fat treat actually become favorites of others.
If you’re craving something sweet and want to be seasonal about it, these Apple Parfaits are the perfect choice. They are especially yummy when made with fresh, local apples, as they have so much more flavor than the apples that have been shipped hundreds (or thousands) of miles and picked weeks earlier.
As a bonus, like many of my other healthy dessert recipes, this one could also pass as a dish at breakfast or lunch. Made with Greek yogurt, you’re getting a serving of protein. Topped with apples you’re getting at least half a serving of fruit. If that isn’t a meal-worthy dish, I don’t know what is.
