Take for example this Brie and Apple Pizza from 1837 Cobblestone Cottage Bed & Breakfast in Canandaigua, NY, an inn beloved for its full three-course breakfasts and located in the state’s celebrated Finger Lakes wine region. While we love pizzas with cheese, tomatoes, and plenty of special toppings for lunch or dinner, when brie and apple come together as a savory breakfast dish – it’s a great way to start any day.
Of course, if you want something simple, pastry-wrapped brie is a fine appetizer.
- 4 cups flour
- 2 tsp. sugar
- 1 envelope instant dry yeast
- 2 tsp. kosher salt
- 1.5 cups warm water
- 2 tbsp. olive oil
- Extra olive oil
- Granny Smith apple sliced thin
- 5 oz brie sliced with rind removed
- 1 cup shredded mozzarella
- Olive oil
- Add the flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine.
- While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball.
- Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
- Grease a large bowl with the olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size.
- Preheat oven to 425 ˚F.
- Place dough on pizza stone and flatten, drizzle olive oil over dough.
- Sprinkle half of the mozzarella on the dough, layer on apple slices and brie.
- Add remaining shredded mozzarella cheese.
- Bake in oven for 20-25 minutes until golden brown.
