Ingredients
  1. 4 Tb. unsalted butter, cut into small pieces and softened
  2. 1 cup shredded cheddar cheese
  3. 2/3 cup all-purpose flour
  4. 1-1/2 cups ricotta cheese
  5. 1 tsp. salt, plus extra for sprinkling
  6. 1/4 tsp. pepper
  7. 2 Tb. chopped fresh parsley and dill
  8. 1 large egg
Instructions
  1. Preheat oven to 450 degrees.
  2. Combine butter and cheddar in a large bowl.
  3. Add flour, ricotta, salt, butter, parsley and egg; stir until well combined.
  4. Drop rounded teaspoonfuls of mixture onto a baking sheet, spacing rounds about an inch apart.
  5. Transfer baking sheet to the freezer and chill until rounds are frozen solid, at least 30 minutes.
  6. Adjust an oven rack to the middle position and heat the oven to 450 degrees.
  7. Transfer the baking sheet with the puffs directly to the preheated oven and bake until lightly browned, about 10 minutes.
  8. Transfer the puffs to a serving platter and sprinkle lightly with salt.
