Scallion Dip

With most of our Christmas shopping done, we were glad to have a day to work on other home-based chores, such as gift wrapping.  While we wrapped, I would have some lamb braising in the oven for a late afternoon meal.

Of course, a lazy Sunday pretty much demands some sort of pre-dinner snack.  With a hearty dinner of lamb, sweet potato latkes, and chard, we didn’t need anything heavy, just something to nibble on while we watched It’s a Wonderful Life.  Scallion dip made the perfect appetizer.  Served with toasted pita bread and pretzels, it quelled our hunger without making either of us feel full.

This dip was delightful.  It was thick and creamy, yet healthy, as the base is Greek yogurt.  There was a good amount of bite from the garlic.  In fact, if you don’t enjoy strong garlic flavor, I would recommend omitting the garlic and using a pinch of garlic powder.  Finally, I used bacon salt to give an extra bit of flavor to the recipe.  You could use regular salt in place of the bacon salt.  If you still want bacon flavor, I’m sure adding some cooked, crumbled bacon would be tasty.

Scallion Dip

Ingredients
  1. 3/4 cup Greek yogurt
  2. 3 scallions, finely chopped greens & whites
  3. 1 garlic clove, minced
  4. 1 tsp. bacon salt
  5. freshly ground black pepper
Instructions
  1. Combine all ingredients in a small bowl.
  2. Can be served immediately or chilled for a few hours to let the flavors meld.
  3. Serve with pita chips, crackers, pretzels, or raw veggies.
