Balsamic Roasted Pineapple

Why eat plain cheese and crackers when you can have them topped with balsamic roasted pineapple?

The holidays are over, and so should all of our indulgent snacking be. However, after devouring dozens of decorated cookies, sampling a multitude of meatballs, and sipping who knows how many holiday-themed cocktails, it can be hard to give up these eating habits. At least for me, my stomach gets pretty used to the extra snack before dinner and the sweet treat to end the day.

So, as the new year begins and I return to my normal style of eating, I find it best to wean myself out of my holiday eating patterns. That means that I don’t go cold turkey in eliminating treats. Rather, I still enjoy treats, but I do so in a healthier manner. 

For example, on a weekend afternoon when we sit down to watch a movie, I still make snacks. They just are much healthier. Believe or not, your appetite won’t mind the fact that there are fewer calories and fat grams, as long as it tastes good. So, as you do your grocery shopping, start looking for items that are healthier but still feel snack-able.

This pineapple made the perfect topping for whole grain crackers and a little bit of goat cheese. (Side note: I love goat cheese because it has a tangy bite but is a low calorie option if you’re craving cheese.) Served while the pineapple was hot, it was a nice way to have a warm appetizer with a delightful sweet and salty combination.

Recipe: Balsamic Roasted Pineapple

  1. 1 whole pineapple
  2. 3 Tb. balsamic vinegar*
  3. 1 tsp. sugar
  4. salt
  1. Preheat oven to 400.
  2. Peel and core pineapple, cut into small chunks.
  3. Spray a rimmed, nonstick baking sheet with cooking spray.
  4. Place pineapple chunks on tray, drizzle with balsamic vinegar.
  5. Toss to coat.
  6. Bake for 15-20 minutes.
  7. If desired, sprinkle top of pineapple with sugar and place under broiler for 30-60 seconds for a caramelized side.
  8. Sprinkle with salt, if desired.
  1. I used an artisanal balsamic vinegar, as it is thicker and more flavorful.
  2. Serve with healthy crackers and goat cheese.
