Chloe’s Farmhouse Tomato Sandwich

Serves 1
A simple sandwich, best made when tomatoes are in season

Ingredients
  1. 1 medium-size ripe, preferably homegrown, tomato
  2. 2 slices bread*
  3. 2 Tb. Duke’s Mayonnaise
  4. Salt and pepper
Instructions
  1. Wash and cut the tomato into thick slices.
  2. Spread the mayonnaise onto both slices of the bread, one side only. (Make sure to spread the mayonnaise to the edge of each slice of bread.)
  3. Place the tomato slices on one piece of bread.
  4. Add salt and pepper.
  5. Cover with the second slice of bread, mayonnaise side down, of course.
  6. Cut the sandwich into two pieces and enjoy the best tomato sandwich ever.
Notes
  1. How to cut the sandwich is debatable- corner to corner or straight across the middle? We all have an opinion.
  2. If packing this sandwich, it is advisable to pack the tomato separately and build the sandwich right before eating.
  3. *Even the bread of my youth like Wonder Bread works great. I really do like Pepperidge Farm Oat Bread now.
