What’s Better Than a Cookie?

Who says stuffing has to be savory?


This week’s recipes have focused on stuffed dishes: Italian peppers and portobello mushrooms. But appetizers aren’t the only things that get to have stuffing. Sure, so do breakfast items, such as stuffed French toast, and main dishes, such as a stuffed pork chop, so why can’t a dessert have a stuffing?

Yeah, dessert deserves to have stuffed dishes also. So, to answer the question poised by the title- a cookie that is stuffed is even better than a plain cookie. I mean, you get all the flavors of a homemade chocolate chip cookie PLUS a chocolate-covered caramel inside. It’s kind of like your childhood dreams in one bite. There’s no need to choose between candy or cookies; you get both.

These Caramel Stuffed Chocolate Chip Cookies are quite addictive. They were made with the goal of producing a cookie that shipped well and was still delicious several days later. However, I also discovered that they work just as well when they are fresh out of the oven. Hence, it was good that I was putting them in boxes and sending them far away. Ahem.

School is back in session, and fall is approaching quickly. If cool weather hasn’t arrived yet, bookmark this recipe for that perfect fall day. Then get your oven ready to fill your home with delightful scents of freshly baked cookies. Be prepared for the looks of surprise and happiness when it’s revealed that you don’t just have cookies, you have cookies with a treat inside!
